Stir-fried Sliced Pork with Pineapple and Cloud Ear Fungus

新鲜菠萝1/4个
瘦肉200克
乾云耳8克
甘笋1/4条 (30克)
葱2条 (切段後将葱白、葱绿分开)

蒜头2粒 (切片)
芥花籽油/橄榄油1/2汤匙
Ingredients : (4 person portion)
Fresh pineapple 1/4 piece
Lean pork 200 g
Dried cloud ear fungus 8 g
Carrot 1/4 piece (30 g)
Green onion 2 stalks (cut and separate the white and green portions)
Ginger 2 slices
Garlic 2 cloves (sliced)
Canola/olive oil 1/2 tbsp
醃料:
生抽1汤匙
米酒1汤匙
粟粉1/2茶匙
Marinade:
Soy sauce 1 tbsp
Rice wine 1 tbsp
Corn starch 1/2 tsp
调味料:
白醋3汤匙
糖2汤匙
Seasoning:
Vinegar 3 tbsp
Sugar 2 tbsp
芡汁料:
清鸡汤或清水3汤匙
粟粉1茶匙
麻油1茶匙
Sauce:
Chicken broth or water 3 tbsp
Corn starch 1 tsp
Sesame oil 1 tsp
做法:
- 瘦肉切薄片拌入醃料醃15分钟;云耳浸软後切块;甘笋切薄片; 菠萝切片,然後切块; 调味料预先调匀,备用。
- 烧热易洁镬,下橄榄油,先将蒜片、薑片、葱白爆香。
- 加入瘦肉片炒至半熟,加入云耳、甘笋、菠萝、调味料拌炒均匀。
- 再加入已拌匀的芡汁料勾芡。
- 撒上葱绿,下麻油炒匀,即成。
Method :
- Slice lean pork and add marinade to marinate for 15 minutes. Soak cloud ear fungus until softened and cut into smaller pieces. Slice carrot thinly. Slice and cut pineapple into chunks. Mix seasonings well and set aside.
- Heat a non-stick pan and add olive oil. Sauté garlic, ginger and white portions of green onion until fragrant.
- Add sliced pork and stir-fry until half-cooked. Add cloud ear fungus, carrot, pineapple, seasonings and stir well.
- Add the well-mixed sauce ingredients and stir-fry until slightly thickened.
- Stir in green portions of green onion and sesame oil. Serve.
